I could eat soup all the time – even in the summer. But in wintertime, it’s my go-to for sure! I could eat soup for breakfast, lunch, and dinner! There’s just something about the warm comfort of a good bowl of soup, right?! So, I figured I’d share a couple of my favorites. These are my top 3 go-to winter soups, especially cold days!
CHICKEN VERDE SOUP
A kind of dump soup if you’d like. It’s so easy to make and everyone besides Olive loves this soup. She’s just not there yet, but I’m sure she’ll get there.
Ingredients: 4-6 cups of chicken broth, rotisserie chicken (shredded/cut), 1 jar of Verde salsa (any brand), Randall northern beans (large jar)
Literally dump it all in a pot, let it stew for a bit and warm up. Serve with a dollop of sour cream, tortilla chips, cilantro and avocado — D E L I S H!
I mean who doesn’t like Chili? Of all the winter soups, this one is probably the most popular! Ok, ok, I know some don’t but this version is not only easy but sure to please your whole family. Basically a dump type of soup too! Love those kinds!
Ingredients: 2 cans Campbell’s tomato soup, 1/2 can of water, 2 cans brooks chili beans (mild or warmer depending on how you like your chili), 2 cans of Red Gold diced tomatoes chili ready, 1 chili seasoning packet, and 1 lb of cooked ground beef.
Dump it all into a crockpot and let it warm all afternoon, or cook over the stovetop if you need it a little quicker. The longer you cook, the softer the beans will be. Top with tortilla chips and cheese! Yumm!
This soup is often referred to as 7 can tortilla soup and it’s so easy! This is a perfect soup for Taco Tuesdays! I found it via Six Sisters Stuff.
Ingredients: Can of black beans, can of pinto beans, can of diced tomatoes, can of sweet corn, can of chicken breast, can of green enchilada sauce, can of chicken broth, taco seasoning packet, cumin, chili powder, garlic powder, pepper, and shredded cheddar cheese.
